INGREDIENTS
4 pounds chicken thighs1 Ginger stalk: about 2-3 inches long
3-4 garlic cloves
1 cup sugar
1 cup water
3/4 cup soy sauce
Cornstarch slurry:
2 tablespoons corn starch
3 tablespoons water
Mix cornstarch and water until fully incorporated
Recipe Demonstration:
1. Slice ginger into 1/4" strips. Smash garlic & remove skin.2. In a large pot place in chicken, sliced ginger, garlic, sugar, soy sauce and water. Mix to incorporate all ingredients.
3. Cook over medium heat until bubbling and reduce to a simmer on medium low.
4. Simmer chicken for a minimum of half a hour. I personally like to keep the lid half off and simmer anywhere from an hour to an hour and a half. *The longer you simmer the richer tasting sauce you will have.
5. Optional: Remove skin & skim off fat that has rendered.
6. Thicken with cornstarch slurry.
Serve over hot rice with a side of vegetables. Easy yummy weeknight dinner!
